Easy + Healthy Chicken Tostadas with Fresh Guacamole

This meal is a highly requested household favorite (even from my picky eater!), and I am more than willing to oblige because it’s so well balanced and healthy.

You get healthy fat, GOOD carbs (gasp – yes, there is such a thing), protein and veggies.

Easy + Healthy Chicken Tostadas with Fresh Guacamole

I’m going to go off on a tangent for a hot minute because I’ve been getting requests on Instagram to share more about my diet and fitness regimen (also the reason for my first recipe post!)… 

I don’t claim to be a nutrition expert, but I did learn a thing or two from my personal trainer when he was getting me ready for a fitness competition a few years ago (that was a one and done bucket list thing). I also learned quite a bit from reading The Fast Metabolism Diet years ago on my quest to help correct my digestive issues.

I don’t do fad diets. To be honest, after learning about well balanced meals and how each component works with our body, it makes it really hard to get on the fad diet train as much as I want to for a “quick fix” sometimes.

I know firsthand how well our bodies respond to a well balanced diet with good carbs from healthy grains, fruit and legumes (fuels energy), healthy fats (burns fat), lean protein (repairs tissue, hair, skin, nails, etc.) and veggies (digestion, vitamins, minerals, etc.).

The only part of fad diets I agree with are the elimination of refined sugar and refined carbs. I don’t even remember the last time I bought a bag of sugar (Stevia is the sweetener of choice in our house), or any white carbs (always opt for brown and/or sprouted).

I’ll step down off my soapbox now. ;) In all seriousness though, this is something I could talk about for hours. It’s a complex subject!

These tostadas are filling since they have lots of healthy fat. I’m usually stuffed after one, and the larger appetites in my house will polish off two. We like to top these with jalapenos because we love spicy food, but you can definitely top these with more traditional toppings such as shredded lettuce, onion, tomatoes, etc. Veggies are ALWAYS unlimited, but skip the cheese to keep it truly healthy.

Easy + Healthy Chicken Tostadas with Fresh Guacamole

Ingredients

  • 4 avocados, pitted and peeled
  • 1 roma tomato, chopped
  • 1/4 cup yellow onion, diced
  • 1 tablespoon fresh lime juice
  • 1 teaspoon sea salt
  • 2 lbs boneless skinless chicken breasts
  • 8 La Tortilla Factory Sprouted Wheat Tortillas
  • Olive Oil
  • Sea Salt

Instructions

1. Cut each avocado in half around the pit.
2. Pit and peel each avocado and place in a medium bowl.
3. Add the fresh lime juice and 1 teaspoon sea salt.
4. Mash to desired consistency, smooth or slightly chunky.
5. Fold in the chopped tomatoes and diced onions.
6. Cover and refrigerate until ready to use.
7. Grill chicken on low heat until no longer pink (approx. 10-12 mins each side).
8. While the chicken is on the grill, preheat the oven to 375 degrees.
9. Cover each tortilla with a light layer of olive oil and sprinkle with sea salt.
10. Place tortillas directly on the middle oven rack.
11. Bake for 10 minutes or until golden brown (you may need to do this in 2 batches depending on the size of your oven).
12. Remove tortillas from oven and top each one with just enough guacamole to spread a light layer on each.
13. Top with desired amount of shredded chicken.
Optional: Garnish with jalapenos and drizzle with Frank’s Red Hot Wing Sauce and/or toppings of your choice. 

Recipe Notes

You can prepare the chicken to your liking, but shredded is easiest to consume. I like it best slow grilled and shredded, but it’s 115 degrees outside right now so I spared the hubs from grilling. This time I boiled the chicken breasts for 20 mins, drained, shredded, put back in the pot and used taco seasoning prepared per the package directions.

I’ve also tried many different types of tortillas for this recipe and La Tortilla Factory Sprouted Wheat Tortillas work the best. They bake evenly and have the perfect soft crunch that doesn’t fall apart. Plus, they’re delicious!! They’re not the easiest to find, but Costco and Amazon have them sometimes and your local health food grocer might as well. When Costco isn’t carrying them, I can usually find them at Sprouts where I live.  

To save time you can purchase pre-made fresh pico de gallo and use 1 cup in place of the tomatoes and onions.
